Birchermüesli – Müesli

Recipe:

Birchermüesli is a most delicious, healthy, traditional Swiss dish prepared by simply combining oats, yogurt, fresh fruits and nuts.  Once stored overnight in the refrigerator it becomes a wonderful go-to for a nutritional breakfast, or a quick afternoon snack. Created in Switzerland by Dr. Bircher, a nutritional pioneer known in the early 1900s as a holistic physician, Birchermüesli has become known worldwide as a healthy food choice.

Dr. Bircher believed that a healthy diet should consist of a Whole Food’s diet. Contrary to the thought of his peers he was convinced that the overall health of a person was not determined by meat consumption (commonly considered the healthy choice of food), but instead it consisted of the “sunlight foods” vegetables, grains, nuts and fruits (thought at that time to be the food of the poor). Dr. Bircher proceeded to open a clinic in Zürich to educate and treat his patients with his revolutionary thought.  Needless to say that one of the iconic dishes he introduced was Birchermüesli. 

Growing up Birchermüesli was definitely a staple in our home, especially during the summer when fruit was plentiful and in season. This dish has now become a comfort food even for our kids.

The following recipe can be easily halved. 

Supplies:

Ingredients:

  • 120 grams blueberries
  • 4 green apples
  • 4 red apples
  • 200 grams raspberries
  • 350 grams strawberries
  • 150 grams pineapple
  • 150 grams grapes
  • 900 grams yogurt
  • 250 grams oats
  • 350 grams orange juice
  • 50 grams almonds
  • 50 grams pumpkin seeds
  • 50 grams walnuts
  • Honey for drizzling 

Directions:

  1. Preheat the wood-fired oven to 375°F – 190°C.
  2. Place the yogurt into a large capacity bowl.
  3. Mix a small amount of raspberry preserves and orange juice with the yogurt.
  4. Grate the apples into directly into the bowl.
  5. The orange juice will keep the apples from oxidizing.
  6. Add the oats and mix well.
  7. Slice the fruit into small pieces and add them to the bowl.
  8. Gently mix everything together.
  9. On an oven safe pan, place the almonds, pumpkin seeds, pecans and other nuts of your choosing.  Allow them to toast in the oven for about 10 minutes. this will allow the oils to be released and intensify the flavor of the nuts and seeds.
  10. Serve the Birchermüesli in a bowl, topping it off with some more fresh fruit, the nuts and seeds, as well as a drizzle of honey. Enjoy!
